Lovely Lunches

 I love this thoughtful gift my son Tom brought over for me yesterday, because he knows I want to start eating healthily again and I'd mentioned that workday lunches can be tricky ...

It's a bento box, with two separate layers and the elasticated band around it to keep everything secure. As well as the cute dinky cutlery on the top, there's a pair of chopsticks and a spoon inside ...

Here's the bottom layer, filled with Summer Rolls, Sesame Egg Rolls, pickled ginger, fresh and pickled cucumber and sugar snap peas, with a dipping sauce alongside ...

And here's the top layer, with a selection of fresh fruit ...


Somehow, it all looks so much more inviting when it's prepared and set out nicely doesn't it? And believe it or not, there are only a couple of WW points in all of this :)

I have two big jars of lentils. Have you heard of this jingle? Beans, Beans, the magical fruit. The more you eat, the more you toot. The more you toot, the better you feel. So, eat beans for every meal! That's me, so my nutritionist said to try Beano, which is an enzyme, so next week is bean challenge week. I was diagnosed with lactose and fructose malabsorption, gastritis, GERD, an ulcer, and possible gastroparesis at my 2nd endoscopy. So, I'm actually doing 4 diets now, because I also have hypoglycemia and PCOS (my female hormones are upside down). The low fodmap diet for the fructose malabsorption is also gluten-free, so the last two months has been so much fun trying to figure out what I can eat without getting an upset tummy! My mother is allergic to wheat and a girlfriend's grandson is celiac (my celiac test was negative), we prepared our kitchen somewhat in advance, so I have a lunchbox with a stainless-steel bento box. It's the stacking kind. I got rid of 30 years of plastic in my kitchen and now have stainless-steel utensils, glass and pottery type dishware. We waited on the appliances to see if I turned out having celiac, but then my crockpot and oven died. The stovetop still works, and I have several other appliances that still do, but use a sleeve for the gluten-free bread in the toaster. I got a new Kitchen Aid mixer (my sister-in-law works for a department store and sometimes she can purchase returns that might need minor work done to it, so she got me a $400 machine that needed a $60.00 replacement part). I've used it a couple of times and it works dandy! I think the word I need to use is I'm really chuffed with it! smile! So I'll keep looking for your recipe.
